Faux Carne Guisada Puertorriqueña

Ingredients
1 portabella mushroom sliced1 carrot shredded2 TBSP pureed pumpkin2 TBSP tomato sauce (I use salt free)2 TBSP Sofrito (homemade is best)Sazon or a dash of each from the following: Black pepper Annatto (achiote) Coriander Cumin Oregano Paprika
Directions
1st step: On medium heat sauté the tomato sauce, sofrito, pureed pumpkin, and sazon in a sauce pan for about 2-3 minutes.
2nd step: Add the shredded carrot, stir, sauté for another 2 minutes.
3rd step: Add the sliced portabella mushroom and enough water to cover the ingredients
4th step: Bring to a boil
5th step: Reduce heat to a simmer.
6th step: Simmer till the sauce is thick and the carrots are soft.

This stew may be eaten on its own, over rice, or other grain of your choosing.
