Broccoli Salmon Cheese Chowder

Ingredients
Olive Oil, 3 TButter, 2 TOnions, .5 C choppedFlour, .25 CMilk, 3 CChicken Broth, 3 CCheddar Cheese, 1 C shreddedBroccoli, 3 C choppedSalmon, 2 ozSalt & Pepper, to taste
Directions
Heat olive oil, butter in large saucepan. Saute onions til limp. Add flour, stirring, to make a roux. Still stirring, add cold milk in a slow stream, continuing to stir, til smooth. Add chicken broth in a slow stream, continuing to stir, til smooth. Heat, stirring, until thick and bubbly. Add cheese, stirring til melted. Add broccoli and salmon. Serve with good bread.
