Quinoa and ground turkey skillet

Ingredients
2lbs ground meat (turkey)1 med. onion chopped3 cloves minced garlic2-4c spinach2c button mushroom (washed, sliced3 carrots, chopped or sliced2c uncooked quinoa1c diced tomatoes2tsp basil3tsp oreganosplashes of olive oil
Directions
1. Add 4c. water to skiller and quinoa. Place lid on. Cook till done 10-12 min.
2 Remove quinoa
3 Add 2 TB of olive oil
4 brown meat
5 add onion, cook till translucent
6 add garlic and mushrooms
7- cook till desired doneness (adding more oil if needed)
8- mix in cooked quinoa

Serving Size: makes 8 1 cup servings
