2 1/2 c. Old fashioned oats, chopped in blender if desired 2 T. ground flax seed meal1 cup Greek yogurt, nonfat3/4 cup canned pumpkin (or 2 mashed bananas)2 eggs, beaten1/2 c. honey (more if you prefer things sweet)1 t. vanilla extract1/4 c. walnuts, if desired1/2 cup dried fruit, if desired (or chocolate chips)1 t. cinnamon2 t. baking powder1 t. baking soda
Heat oven to 350 degrees. Combine oats with wet ingredients. Set aside. Stir dry ingredients together. Stir into wet ingredients. FIll greased muffin tins and bake for 20 minutes or until toothpick comes out clean.
