Greens Quiche (based on one by Happy Herbivore)

16 oz of firm tofu1.5 Tbsp of Dijon mustard1/4 cup + 2 Tbsp of nutritional yeast1 Tbsp of water -or- lemon juice1 Tbsp of onion powder1 Tbsp of garlic powder1/2 Tbsp of turmeric 1/4 cup of cornstarch1/2 tsp of salt3 cups of spinach, chopped
Preheat oven to 350 degrees F. Grease a 8x8 casserole and set aside.
Put all ingredients except spinach in a food processor or blender. Process until smooth. Add spinach and mix thoroughly. Add to casserole dish, using spatula to smooth out.
Cook 30 to 40 minutes or until top is golden and firm. Allow to cool at least 10 minutes before serving.
