Taco Salad - Hominy & Pinto Bean "Taco Meat"

Ingredients
3 - 14.5 oz cans hominy 1 - 14.5 oz can pinto beans1 - 14.5 oz can diced tomatoes1 - small can green chili peppers, diced1 1/2 tblsp. taco seasoning1 tblsp. chili powder1/2 tsp. lime juicesalt and pepper to taste
Directions
Open all cans. Drain out extra liquid and rinse the hominy and pinto beans. Dump into soup pot. Add spices and lime juice. Cook on medium until hominy is tender to your taste: 10-30 minutes.

Serving Size: Makes appx. 7 1-cup servings. (Depending on how much you cook down the liquid.)
