Beef chuck, arm pot roast, 32 ozTomato Paste, 0.5 cup*Tomatoes, red, ripe, canned, wedges in tomato juice, 2 cup Garlic, 6 clove Onions, raw, 1 large Chili powder, 2 tbsp Cocoa, dry powder, unsweetened, 1 tbsp *Cumin seed, 1 tbsp Beans, white, 2 cup *Extra Virgin Olive Oil, 4 tbsp *Coriander leaf, dried, 1 tsp Pepper, red or cayenne, 1 tspSalt, 1 tbspPaprika, 1 tbspWater, tap, 6 cup (8 fl oz)*Chili's, green, diced, mild, Hatch's brand, 4 tbsp
1. Heat the oil in a large saucepan. Add the meat and brown (about 4 minutes per side).
2. Remove meat and set aside
3. Add the garlic and onion, cook and stir until tender.
4. Add the green chilis and saute another minute.
5. Add the meat, beans, tomatoes, paste, water, and spices. Mix well.
5. Bring to a boil then reduce heat and simmer, covered, for 2-4 hours.
Serving Size: makes 21 .75cup servings
