Ratatouille made with Zucchini

Ingredients
4 tbsp Basil 1 tsp Salt 1 cup, sliced Onions, raw 1 tbsp Parsley 4 cup, sliced Zucchini 4 plum tomato Tomatoes, red, ripe, raw, year round average 1 1tsp Olive Oil
Directions
1. In large skillet, saute onions in Olive Oil until transparent.
2. Add Tomatoes, Parsley, Basil, Pepper, & Salt; cook until tomatoes are soft.
3. Add Zucchini. Simmer for 20 minutes, or until Zucchini is to your liking.
