Beef Enchilada Casserole (pampered chef)

1 lb ground beef1 medium onion, chopped1 medium bell pepper, chopped1 packet taco seasoning (low sodium)12 small yellow corn tortillas1 C shredded cheeseCilantro, 1/4 cup chopped
brown ground beef, drain. Add onions, peppers and taco seasoning to pan with drained beef. Add about 1/4 water, and simmer until veggies are tender.
Cut tortillas into squares.
Layer tortillas in the bottom of a pan (I used my Deep Covered Baker), then half the beef, and half the cilantro, and cheese. Repeat Layers except the cilantro.
Microwave the pan for about 5 min to melt the cheese. Remove from microwave, top with remaining cilantro.
Serving Size: makes 6 servings
