Mediterranean Cod - Baked

Ingredients

Cod (fish), 22 oz, at least 1" thick*Lemon Juice, 1 fl oz Celery, raw, 1 cup, sliced as thin as possibleFennel, 1 cup, sliced as thin as possibleStewed Tomatoes, 1.5 cup *Red Bellpepper, 1 cup, sliced as thin as possibleBlack Olives, canned (small-extra large), 4 tbsp (remove)Olive Oil, 1 tbsp (remove)Salt Pepper
Heat oven to 450 F.
Wash fish and pat dry.
Salt and pepper both sides.
Rub lemon juice on both sides.
Put parchment paper into a deep baking pan (helps with the cleanup, but you can skip, and spray the dish instead.
Arrange the Celery, Fennel and Pepper on bottom of pan.
Put fish on top.
Spread tomatoes and olives on top. Add any leftover lemon juice.
Check for done-ness after 12 minutes.
