(Almost) Fat Free Pumpkin Pie Filling

2 egg whites from large eggs1 large egg2/3 C brown sugar1 Tbsp whole wheat flour1 tsp salt1 Tbsp pumpkin pie spice1 15 oz can fat free evaporated milk1 15 oz can pumpkin
Beat egg and egg whites. Add pumpkin and blend together. In small bowl combine flour, salt, and spice. Pour about 1/3 cup of the milk into the dry ingredients and mixed until blended. Add this to the egg and pumpkin mixture. and stir until blended. Add the brown sugar and the rest of the milk, stirring until completely blended. Pour into pie pan or similar, shallow pan and bake at 425 for 15 minutes. Reduce temperature to 350 and bake for an additional 35 - 45 minutes. Makes about 8 1/2 cup servings.
