Quinoa Cranberry Coconut Granola

1 cup quinoa2 cups rolled oats1 cup chopped almonds1/2 cup shaved coconut1 teaspoon cinnamon1 cup natural applesauce2 tablespoons honey1 tablespoon coconut oil, melted1/2 teaspoon vanilla extract1/4 cup dried cranberries
1. Preheat the oven to 300 degrees F. Line a large baking sheet with parchment paper.
2. In a large bowl, combine quinoa, oats, almonds, coconut, cinnamon, and salt.
3. In a small bowl, whisk together applesauce, honey, coconut oil, and vanilla extract. Pour the wet ingredients over the dry ingredients and stir until combined. Pour the granola onto the prepared baking sheet. Spread into an even layer. Bake for 30-40 minutes, or until granola is golden brown, stirring every 10 minutes or so.
4. Stir in the dried cranberries. Let granola cool completely. Store in an air-tight container for up to one month.
