One Egg Spinach Omelet

Ingredients
one egg1 cup fresh baby spinach1 tsp butter2 tbls shredded cheddar cheeseSalt and Pepper to taste
Directions
Put spinach on a plate and microwave for 30 seconds.
Beat egg with salt and pepper. Measure out cheese.
Melt butter over med-high heat being careful to spread over entire surface. When hot pour in eggs and swirl around to coat the bottom of the pan and egg is spread evenly. When egg is set put spinach down the center and sprinkle on cheese. Gently fold sides over center and slip out of pan on to onto plate.
