Open-Faced Tuna and Artichoke Melt

Ingredients
1/2 Cup Canned Artichoke Hearts (about four pieces), without oil, drained and chopped1/4 Cup Scallions, chopped1 Tbsp Fresh Lemon Juice1 tsp Olive Oil1/2 tsp Italian Seasoning1/8 tsp Black Pepper1/8 tsp Cayenne Pepper6 oz Water-packed Albacore Tuna, drained and flaked2 Whole-wheat Pitas3 Tbsp Grated Parmesan Cheese
Directions
1. Preheat broiler.

2. Combine first 8 ingredients in a medium-sized bowl. Divide the mixture evenly among pitas; sprinkle with cheese.

3. Place on a baking sheet; broil 5 inches from heat until golden brown, 5 minutes.
