Tuna Vizcaine Casserole

Ingredients
3 5-oz can Tuna fish Rinsed and drained2 large (3" dia) Tomatoes 1/2 med (2.5" dia) Onions 5 cloves Garlic 1-3 Tbsp capers Rinsed and drained3 oz Olives, green Pitted, sliced4 pc Pepperoncini Rinsed, drained, and sliced1 lrg (3"- 4-1/4" dia) Potatoes, white cubed2 Tbsp Olive oil
Directions
Blend tomatoes with onions and garlic.
Heat the oil over medium-high heat in a large pot.
Pour in the tomato blend. Bring to a boil.
Add the rest of the ingredients but the fish and potatoes.
Reduce heat medium and simmer until the sauce changes color, about 15 minutes.
Add the fish and potatoes.
The casserole will be ready when the potatoes are cooked, about 30 minutes.
