Introduction

A fabulous fish dinner, even better when served with whole grain rice. A fabulous fish dinner, even better when served with whole grain rice.
Number of Servings: 4

Ingredients

    1-1/2 lbs red bell peppers, stems removed, cut into quarters and seeded
    1/2 cup slivered almonds, toasted
    1/4 cup olive oil
    2 tbsp balsamic vinegar
    1-1/2 tbsp tomato paste
    1/4 tsp cayenne pepper
    4-6 oz flounder fillets

Directions

For the sauce, arrange the bell peppers skin side up on a baking sheet.
Broil until the skin is blistered an charred.
Let cool and peel off blackened skin.
Combine the bell peppers, almonds, olive oil, vinegar, tomato paste and cayenne pepper in a food processor. Process for 1-2 minutes until the almonds are ground.
Heat the sauce in a saucepan until warm.
For the flounder, bring a skillet of salted water to a simmer.
Add the flounder.
Simmer, covered for 5 minutes until fish is opaque turning once.
Remove and drizzle with warm sauce.

    I actually cherry-picked your Red Pepper Sauce and served it over a boneless, skinless, chicken breast - stuffed with chopped spinach and non-fat ricotta. My family loves the sauce. I will be making your whole dish next. - 3/6/09

    very good, the only thing i did different was half way through pour in some instant brown rice, took care of all the juice and gave the rice a wonderfull taste - 8/15/08
