Ingredients

    LARGE DEVEINED SHRIMP -NO TAIL (41-60)

    2 CUPS BROWN RICE ( 1 CUP UNCOOKED)

    DICED TOMATOES W/BASIL, GARLIC & OREGANO (15 OZ)

    LEMON PEPPER SEASONING- (1/2 TSP)

    COOKED SOYBEANS (2 CUPS)

    OLIVE OIL COOKING SPRAY (3 SPRAYS)


Directions

ADD THE RICE, SOYBEANS AND SAZON TO TWO CUPS OF BOILING WATER.

BOIL FOR 40 MINUTES. MEANWHILE, RINSE, PAT DRY AND SEASON THE SHRIMP WITH LEMON PEPPER.

WHEN THE RICE IS DONE, LET IT COOL. THEN SPRAY A MEDIUM SKILLET WITH THE OLIVE OIL. THEN LIGHTLY BROWN THE SHRIMP IN IT.

THEN ADD THE RICE MIXTURE AND TOMATOES TO THE SKILLET AS WELL. STIR AND SERVE.

MAKES 6- 2 CUP SERVINGS.

    Sounds good. The brown rice is an excellent idea. Sazon is great to use in the absence of Saffron. You could substitute Roma tomatoes for the canned and possibly save a bunch on the sodium. If you salt it use sea salt. It enhances the flavor. - 2/24/10

    Delish!!! I added some lemon for a little added zest and of course a few dashes of hot sauce. Also... swapped peas for the soybeans because i had those on hand. Thanks for the great reciped!! - 1/17/12

    Very Good
    We enjoyed this recipe. Changes included english peas instead of soy beans and a little olive oil vs spray. I would suggest to drain tomatoes before adding to lessen the liquid in the recipe. - 3/27/09
