Ingredients

    1 lg onion peeled/diced
    3 cloves minced garlic
    2 stalks celery diced
    2 med sweet red peppers diced
    2 carrots diced
    15 z can crushed tomatoes
    1 c long grain brown rice
    1 12 oz pkg andouille turkey sausage cut into 1/2 thick rounds
    1 tsp hot sauce
    2 Tbsp minced thyme
    1 tsp sea salt
    1/2 tsp ground pepper
    2 cups water
    3 Tbsp minced parsley
    1 lb peeled deveined shrimp

Directions

1. place first 8 ingredients in that order in crockpot
2. add hot sauce, thyme salt and pepper and water
3.cover cook 8-9 hours on low
4. 1 hour before finished cooking toss in parsley & shrimp, stir until well combined adding more water if needed
