African Peanut Chicken Soup

Ingredients
2 onions chopped fine, about 2 cups2 large red or green bell peppers or a combination, chopped 3-4 garlic cloves, minced2 T peanut or vegetable oil1 28 oz can diced tomatoes, including juice1 49 oz can chicken broth¼ t dried hot red pepper flakes, or to taste¼ t black pepper½ c long grain rice (3/4 c for main dish)1 ½ c shredded cooked chicken2/3 c creamy peanut butter
Directions
In a heavy kettle, cook the onions, bell peppers and the garlic in the oil over moderate heat, stirring, until the onions just begin to brown. Add the tomatoes with the juice, the broth, red pepper flakes and black pepper. Simmer uncovered for 1 hr. Add the rice and the chicken and simmer for 10-15 min. or until the rice is tender. Add the peanut butter, stirring until the soup is smooth. Stir in salt to taste and additional red pepper flakes if desired.
