Carrots, raw, 5 carrot (7-1/2") (grated)Green Bell Pepper (cut into bite-size strips)Red Bell Pepper (cut into bite-size strips)Orange Bell Pepper (cut into bite-size strips)Yellow Bell Pepper (cut into bite-size strips)Cucumber (with peel), (cut into disks)Pineapple, fresh, 1 fruit (chopped into bite-sized chunks)2 cup cherry tomatoesFresh Ginger Root, 4 tsp (shredded)
Wash, core, cut, and grate all the ingredients. Toss together about an hour before serving.
Goes will with balsamic vinegar and oil for a dressing, although standard Italian dressing works well too.
