Taco-ish Zucchini boats

2 medium sized zucchini6 OZ cooked and finely shredded chicken breast1 Roma Tomato1 Tablespoon finely chopped onion1/4 cup chedder cheese1 egg white1/2 cup pureed black beans1tsp cumin, chili powder, garlicpinch of salt and pepper
Hollow out zucchini. Save the middle, just not for this recipe. Puree black beans, chop onion, chop tomato, and shred chicken. Evenly spread black bean puree on each hollowed out zucchini. Mix egg, tomato, chicken, onion, cheese, and spices. Mix well and then fill boats with mixture. Pack it in there. Bake at 350 for 20-30 minutes depending on how you like your zucchini. And uh, eat!
