Chicken Breast (cooked), no skin, 3 unit (yield from 1 lb ready-to-cook (remove) Olive Oil, 2 tbsp (remove) White Wine, 2 fl oz (remove) Garlic, 1 tsp (remove) Chicken Broth, .5 cup (8 fl oz) (remove) *Lemon Juice, 1 wedge yields (remove) Capers, canned, 1 tbsp, drained (remove)
flatten chicken breasts. season with salt and pepper and dredge chicken breasts in flour and saute 2 to 3 minutes on each side with lid on. remove and keep warm.
Deglaze pan with wine add garlic. Cook till garlic is slightly brown. and liquid has almost evaporated. add breasts and cook on each side about 1 minute. transfer to warm plates. finish the sauce with butter and pour sauce over cutlets.
