Chipotle stuffed, bacon wrapped chicken

6 boneless, skinless chicken thighs6 strips bacon (possibly more if larger thighs)6 chipotle chilis in adobo sauce1 T smoky spice blendSmoky spice blend-1 T chipotle powder1 T smoked paprika1T onion powder1/2 T cinnamon1/2 T black peppersalt to taste (1 t)
Preheat oven to 400 degrees (or would work great on a charcoal grill)
Combine all the spices and store in a small container, or just scale down to amounts used for this recipe. Convert tablespoons to teaspoons and you should be good
trim visible fat of thighs and remove bone and skin if not already
pat chicken dry and then sprinkle both sides of chicken with the spice blend
Now, roll the thigh up around a chipotle pepper, and then wrap 1 (or 2 if you want) strips of bacon around the thigh
Place seam side down on a grate so that heat gets to all the sides and a little bacon fat can drip off.
sprinkle tops with a little more spice blend and cook in oven 30-45 minutes- until bacon is beginning to crisp and chicken is fully cooked.
Possibly finish in broiler for extra crispy bacon
Goes excellent with spicy sweet potato fries, or just a salad to keep this low carb.
