Beet burgers

Ingredients
2.5 cups brown rice, cooked and cooled2 cups brown lentils, cooked and cooled2 cups shredded beet (~1 large beet)1/2 t salt1/2 t pepper2 t dried thyme.25 t anise extract (or 1 t ground fennel)2 t dry mustard6 T very finely chopped onion2 little hot peppers finely chopped1/2 t granulated garlic4 T peanut butter (or other nut butter)1 C fine bread crumbs
Directions
Peel and shred the beet, using food processor or similar
put rice and lentils through the food processor
Add other ingredients, mix well.
Refrigerate at least 1/2 hr.
Shape into burgers, 1/2 C per burger
Saute in lightly oiled pan, about 12 min.

Serving Size: 8 burgers, 1/2 C per burger
