PROTEIN PUMPKIN MUFFIN

Ingredients
1 scoop Sunwarrior protein powder1/4 tsp. cinnamon1/8 tsp. baking soda1/4 tsp. vanilla1/4 cup pumpkin puree1 flax egg (1 tbsp. ground flax + 3 tbsp. warm water, left to sit for ~3 minutes)cooking spray
Directions
Spray an individual baking dish (or mug) with cooking spray.Add your 1 scoop protein powder, cinnamon, and baking soda to your baking dish. Give it a whirl with a fork to mix it all up.Once the protein powder mixture is well incorporated, add your pumpkin, flax egg, and vanilla to the dish.Stir, stir, stir until it’s all mixed up.And microwave this bad boy for 3 minutes. Let it sit for about one minute.Take a butter knife and loosen the muffin away from the edges.And flip your baking dish over onto a small plate
