Pasta Carbonara

6 oz Ham1.5 T Olive Oil1/2 Small Onion6 oz Frozen Peas10 oz Pasta2 Large Eggs1 c Parmesan Cheese4 cloves Garlic1.5 t Black Pepper
Boil 2 quarts water - add pasta.
Toast ham, onion, and garlic in oil with some pepper - add peas and remove from heat or turn way down.
Whisk eggs and half of cheese with more pepper.
When pasta is done:
Add 1.5 c pasta water to ham mixture.
Drain pasta and add pasta to ham mixture.
Slowly add egg mixture to ham mixture, stirring constantly. The hot mixture will cook the eggs, making a creamy sauce in a couple of minutes.
Check to see if you added enough pepper.
Top with remaining cheese.
Serving Size: makes 3 dinner plate-full servings
