Quinoa with Spinach and Peas

Ingredients

Directions
Cook quinoa in the vegetable stock according to package directions.
While quinoa is cooking, toast the almonds in a 350 oven for 6-8 minutes
In a non-stick skillet, heat olive oil on low heat. Add onion and sauté until translucent (5 minutes) Add garlic and cook another minute.
Add peas to skillet and sauté until peas are thawed. Season with salt and pepper. Coarsely chop spinach and add to skillet, Cook until slightly wilted.
Add garbanzos, chopped craisins and sliced olives and toss until everything is heated through. Season with salt & pepper to taste.
