Pine Nut & Tomato Brown Rice Pasta

Ingredients
16oz Brown rice spaghetti pasta (Trader Joe's)1 oz pine nuts, chopped3 garlic cloves minced1/2 Tbsp olive oil1 1/2 lbs of fresh tomatoes, chopped2 tsp dried basil1/2 tsp kosher salt1/2 tsp pepper
Directions
Cook noodles according to package directions. Meanwhile, heat oil over med-high heat. Add nuts & garlic & cook until toasted, but not burnt (2-3 minutes approx). Add chopped tomatoes & basil. Cook on medium heat until it starts to break down (5-10 min) & then simmer for 10-20 min. Add salt & pepper. Drain noodles & rinse & then mix into sauce mixture.

Serving Size: makes 8 servings approx 6.8 oz each serving
