Quinoa with sauteed vegetables

1 cup Organic White Quinoa2 cups Vegetable Broth2 tbsp Olive Oil1 1/2 small onions1 cup broccoli1 large parsnip1 cup shiitake mushrooms1 cup white mushrooms1 cup frozen zucchiniSaltBlack PepperGarlic Powder (can use 2-3 garlic cloves instead)2 tbsp Grated Parmesan cheese
Cook the quinoa using the vegetable broth
saute the onions in the olive oil with the salt, pepper and garlic powder. add the parsnips, mushrooms and frozen zucchini.
Toss the sauteed vegetables with the quinoa and parmesan cheese
