Foxy's Indian-Spice Rubbed Pork Loin Chops with Raita Sauce

5 pork loin chops - lean and trimmedFor Pork Marinade:2 Tbs of curry powder1/2 Tbs of Star Anise, ground1 tsp of ground mustard seed1/4 tsp of allspice2 cloves of garlic chopped (for the garlic lovers)1/4 cup of olive oilChili pepper flakes to preferenceFor Raita:4 oz container of plain non-fat yogurt1/4 cup of chopped roasted walnuts1 squirt of lemon juice (approx 1 tsp or to taste)1 tsp of roasted garlic choppeda dash of salt
*Prepare marinade and coat pork evenly
*Refrigerate for 20-30 min
*Heat oven to 350
*While pork is marinating- mix ingredients for Raita and taste to make sure it has enough salt and lemon for you and then refrigerate so it will be a nice cooling sauce for later
*Lay pork on a lightly oiled cookie sheet and place sliced onion on each pork piece
*Put pork into oven for 40 minutes or until cooked through
*When done add raita sauce on top or on the side
