Egg salad

Ingredients
8 hard boiled eggs, chopped1 tbsp vegan mayo (made with olive or canola oil)2 tbsp dijon mustard1/2 cup chopped onion1 tsp dried dill1 tsp paprikadash salt and pepper
Directions
Mash and mix all ingredients in a bowl together with a large fork or potato masher. I like to leave it a bit chunky.
