Thai Peanut Chicken Lettuce Wraps

12 oz chicken breasts, cut into strips1/4 tsp garlic salt1/4 black pepper2.5 cups broccoli slaw mix (or one package of 10 oz)1/2 tsp ground ginger3 tbsp creamy peanut butter2 tbsp water1 tbsp low-sodium soy sauce1/2 tsp minced garlic
Cut the chicken into strips/smaller pieces, place into a saute pan over medium heat. Add the garlic salt and black pepper and let the chicken cook for 6-8 minutes, until no longer pink in the middle. Place in a dish off to the side. In the same saute pan, turn the heat to low and add the broccoli slaw miz and 1/4 tsp ginger and cook until the veggies are nice and crisp (about 3-5 minutes). While the veggies are cooking, in a saucepan, combine the peanut butter, water, soy sauce, minced garlic, and remaining ginger and whisk over low heat until the mixture has a smooth, creamy texture and the ingredients are all incorporated together. Place into a serving dish. Once the veggies are done, place in the bowl with the chicken and toss. On 1 lettuce leaf, use 1 tbsp of the peanut sauce and about 3/4 cup of the chicken/slaw mix and enjoy!
