Thai cashew chicken

Ingredients
1 lb chicken, skin removed, cut into bite-sized pieces2 Tbsp oil6 dry red chiles2 cloves garlic, minced1/2 onion, diced1/2 c cashews2 Tbsp fish sauce2 tsp soy sauce1/2 tsp sugar
Directions
Heat oil in pan. Saute red chiles for a minute, until slightly darker but not blackened. Remove with slotted spoon.
Add chicken to hot oil, sauté for a couple of minutes. Add onion, sauté for another couple of minutes. Add fish sauce, soy sauce and sugar, stir to mix. Finally, add cashews & chiles. Heat for a minute, then serve.
