Brandy Apple pork-chops

2 boneless porkchops 3 slices turkey bacon2 small sweet apples, peeled, cored, and chopped (about 1 cup)salt and pepper to taste1 tsp thyme1 tbsp I Can't believe it's not butter, light1 tsp virgin olive oil50 ml (1shot) brandy1/2 cup apple juice or cider1/2 cup 2% milk1 tbsp corn starch
cook turkey bacon on med heat until crispy and crumble, put aside
add i cant believe its not butter to skillet and melt on med-low with chopped apples
saute for 4 min until lightly browned and set aside
pound chops between plastic wrap to 1/2 inch thick and salt and pepper each side
add olive oil to skillet and brown pork chops on both sides about 3 min per side
remove chops and put on separate plate
deglaze pan with brandy and applejuice and scrape up bits from bottom of pan while stirring on med-high
mix cornstarch with milk in a small bowl and add to pan bringing to a simmer, reduce heat.
add porkchops with any drippings, bacon, and apples back to pan, stir, cover, and simmer on low for about 10 min or until pork-chops are cooked through.
plate half of a porkchop to each plate and top with bacon, apples, and brandy cream sauce.
Serving Size: 2 large pork-chops cut in half will feed 4
