Lentil Patties

Ingredients
1 c cooked lentils2 T each chopped green and red peppers1/4 c chopped mushrooms6 chopped green olives1/4 t chopped garlic2 medium eggs2/3 c wheat germ1/2 t pepper1t salt2 T olive oil6 thin slices red onion
Directions
Mix first 9 ingredient in bowl with fork smashing lentils and stirring. Can be mixed in salad maker but not necessary. Heat frying pan or griddle and oil lightly with olive oil. Using 1/4 c measure, put a measure full on hot pan flattening to form party. May need to lower heat. Cover and cook a few minutes. Carefully flip and cover to cook a few more minutes. Should look toasted but not burnt. Remove, re-oil pan, if needed and cook remaining patties. Serve topped with onion slice and perhaps some homemade mayonnaise.
