Ingredients
450 grams soya mince1large aubergine2 onions100mls white wine1 vegetable ( or beef if prefered)stock cube1tbs mixed dried herbs1tsp cinnamon1/2tsp mixed spice300mls skimmed milk1 egg1tbsp cornflour50g parmesan cheese2tbs olive oil2 garlic cloves
Directions
slice aubergine and place into greased baking tray,( use 1tbs oil.bake ar 180 degrees for 25 mins till soft.
Cook onions and garlic in remaining oil,add mince, tomatoes, stock cube, cinnamon herbs and mixed spice cook for 5 mins,
Blend cornflour in a little milk, add to the rest of milk.
Beat egg and add to milk and cornflour, cook untill thick stirring all the time.
Place layer of mince in ovenproof dish then alyer of aubergine... repeat with the rest then cover with sauce.
sprinkle cheese on the top and bake for 40 to 50 mins on 170 degrees oven.
