red beans & rice w/ grilled chicken

Ingredients
8oz boneless, skinless ckicken16oz can red kidney beans drained2 cups cooked rice6oz vegatable juice (v8)1 small onion chopped1 clove garlic chopped1/2 tsp blk pepper1 tsp cajun seasoning1 tsp franks red hot1/4 tsp cayene pepper (optional)salt to taste non stick cooking spray
Directions
Cook rice according to instructions depending on type used.
Drain kidney beans and sautee in non stick cooking spray until tender.
Spray pan w/ non stick cooking spray and cook ckicken.
When cooked dice ckicken into small cubes. Chop onions and garlic. In large skillet, sautee in non stick cooking spray.
Add chicken, cajun seasoning, black pepper,cayene, and red hot, and v8 juice to onions and garlic pan mix rice into mixture,
Add seasoning to taste.
Spice can be adjusted to taste
Makes 8 1 cup servings
