1 medium onion, chopped1 yellow bell pepper, chopped1 cup chopped mushrooms6 oz fresh spinachOlive oil, garlic flavored2 eggs1/2 cup egg beaters1 1/2 cup skim milk1/2 cup flour1/2 tsp baking powderPinch of chipotle chile seasoning
Preheat oven to 400 degrees
1. Saute onion and bell pepper in large frying pan with olive oil on medium high heat until onion is translucent.
2. Add mushrooms and fresh spinach. Stir until spinach is fully wilted. Remove from stove.
3. In separate bowl, whisk together eggs, milk, flour, baking powder and seasoning.
4. Mix vegetables into liquid mixture.
5. Spray a 12-cupcake pan with non-stick spray or olive oil spray (I had leftover mixture enough for one more).
6. Fill to nearly the top (mixture will grow slightly during cooking).
7. Cook for 20 minutes. Remove from oven and let set in pan for 5 minutes. Remove to rack to cool.
Serving Size: Makes 13 cup-cake sized quiches
