Sicilian Cauliflower Salad

1 head cauliflower, chopped into small florets1 red onion, diced2 eggs, hard boiled, peeled, and chopped1 tbsp. capers, drained3 tbsp. red wine vinegar1 tbsp. olive oilSalt, pepper, and dried or fresh thyme
Steam the cauliflower lightly, just about 5 minutes, and then refrigerate until cool.
Saute the red onion just until translucent, and then refrigerate until cool.
Combine the cauliflower, boiled egg, and capers and mix thoroughly, then add the vinegar and olive oil and mix well.
Season to taste with salt, pepper, and thyme (or herbs de provence--that's tasty too!)
Serving Size: Makes 4 large servings
