Curried Pork Chops

3 tbsp olive oil2 tbsp curry poweder1.5 tsp minced garlic1 cup chopped red pepper1 cup chopped green pepper1 tbsp cider vinegar1.5 cup brown rice14 oz pork chops cubed2 cups water
Heat 2 table sppoins oil over medium heat, add cury powder, garlic, and stir 1-2 minutes until garlic is golden
add pork, stir to coat completely with curry and garlic, cook and stir 5-7 minutes until pork is not pink anymore, then add bell pepper and vinegar and stir 3 minutes or until bell peppers are soft, sprinkle on some salt. A
add water bring to a coil, reduce heat and simmer 30-45 minutes stiring occasionally,
meanwhile cook brown rice per directions on back of box
serve the pork curry over the brown rice.
