1 12 oz. pkg whole wheat lasagna noodles1 block extra firm tofu2 tbsp. nutritional yeast flakes1 tbsp. lemon juice1 tsp. salt1 14.5 oz. can crushed tomatoes1 tsp. Italian seasoning1 pkg. frozen spinach4 oz. soy cheese shredds
Cook lasagna noodles according to package directions. Meanwhile, break up tofu with a fork. Mix nutritional yeast, lemon juice, and salt into the tofu. Thaw the spinach in the microwave, then drain. Mix the tomatoes, Italian seasoning, and spinach. Spray a 9 x 13 inch baking dish with Pam olive oil cooking spray.
Heat oven to 350 degrees. Spoon a layer of tomatoes into baking dish. Follow with a layer of drained lasagna noodles, then a layer of tofu mixture. Continue layering until you have three layers. Top with the soy cheese. Bake for 60 minutes.
Serving Size: Makes 12 2 by 3 inch servings.
