6 cups peeled and sliced zucchini3 Tbsp lemon juice1/4 cup Splenda 1 tbsp ground cinnamon1 teaspoon ground nutmegTOPPING:½ cup chopped walnuts½ cup almond flour1/2 cup oatmeal1/4 cup Splenda brown Sugar blend1/4 cup Splenda 1/2 cup butter1 teaspoon cinnamon
Grease a 9x9 glass pan and add zucchini. Mix in the lemon juice, Splenda, cinnamon and nutmeg. Combine topping ingredients in a separate bowl and pour on top of zucchini. Bake at 350 for 45 minutes or until zucchini is soft.
