Chicken Cordon Bleu with Hollandaise

Chicken 4 Chicken Thighs4 Ham slices4 Swiss Cheese slices1/4 cup of Progresso Italian Bread Crumbs1 clove of garlic1 egg 1/4 cup parmesan cheeseHollandaise Sauce1 stick of butter2 egg yolk1 lemon squeezed juice2 tbs of hot water
Pound the chicken flat then roll a slice of ham and cheese inside the chicken thigh and secure with toothpicks.
Beat egg in bowl to use as a coating. Mix parmesan, garlic and bread crumbs in a 2nd bowl. Dip chicken in egg solution then bread crumbs.
Pan fry until golden then bake at 350 degrees for 20-35 minutes (check with meat themometer).
Sauce:
Heat butter until melted. In seperate bowl, mix egg, lemon, and dash of salt. Remove butter from stove and gradually whisk into the egg mixture until thickened. Add water, return to sauce pan and whisk until thickened to desired consistency.
