Pineapple Chutney

Ingredients
1.5 C Fresh Pineapple in small chunks1 C fresh pineapple juice1/4 C diced red pepper (mix in some pablano pepper for a little heat2 tsp brown sugar1 T apple cider vinegarsalt to taste
Directions
Cook pineapple and peppers in juice on high to reduce a little. Add brown sugar and vinegar and simmer for another 10 minutes uncovered to make a thicker sauce.
