2 red bell peppers1 medium onion2 medium tomatoes2 cloves of garlic13 raw cashews (or 1/4 cup)1 tbsp water2 tsp balsamic vinegar1 tbsp olive oil1 tsp chili flakes
cut peppers, onion, tomatoes and garlic into quarters and drizzle with oil and vinegar. roast in oven at 450 for 45-60 minutes. In the meantime, soak cashews in water. Drain cashews, and combine all ingredients in blender until smooth. Serve over whole wheat or brown rice pasta.
