Crock-pot Rainbow Minestrone

Ingredients
1 lb ground beef (or turkey or chicken)1 cup shredded cabbage2 carrots, peeled and sliced2 ribs of celery, sliced2 potatoes, cubed (optional)1 zucchini, chopped1 summer squash, chopped2 (14.5 oz) cans diced tomatoes1 lg onion, chopped1 bay leafsalt & pepperseasonings to taste (oregano, thyme, cilantro, basil, garlic)
Directions
Throw everything into the crock-pot, set to low for 8 hours or high for 3-5 hours. So easy!

*Potatoes may be left out for a low carb option
