Directions
preheat oven to 400 deg. line bottom of roaster (with rack) with water. cut one carrot and 1 celery stalk (with leaves) into chunks and slice onion. add to water. place rack over pan. grate (food processor) other carrot and celery stalk. in medium bowl, add meat, seasonings and egg substitute. mix until evenly distributed. add oat bran and sprinkle with cold water. mix until evenly distributed. shape into football. cook approx 1 1/2 hrs until well browned. let sit 5 minutes before slicing. will have slightly crunchy crust. alternate cooking method. use covered roaster without rack and cook 2 1/2- 3 hrs. will be soft on outside. you may also use this method and shape into balls, 1 ball per serving.
