Coconut flour 1 1/4 c.Almond flour 1/4 c.Salt 1/2 t.Baking powder 1 1/2 t.Butter 85 gEgg 1 largeVanilla 1 1/2 t.Sugar Twin Brown 4 T
Mix coconut and almond flours in food processor, pulsing until the coconut is very fine. Add salt, baking powder and about 1/3 cup brown sugar twin.
Use food processor to pulse in small bits of butter.
Mix egg and vanilla together. Add to flour mixture and pulse just until mixed.
Form into 1" balls and flatten to 3/4 inch. Cook at 350 for 12-14 minutes 'til edges slightly brown.
Allow to cool on cookie sheet for 2 minutes - then transfer to cooling rack.
Serving Size: Makes 16 cookies
