Cilantro-Citrus Vinaigrette

Ingredients
1 clove garlic1 cup fresh cilantro leaves1 serrano chile pepperJuice of 1 small orange (about 2 Tbsp)Juice of 1 lime (about 1 - 2 Tbsp)1/4 cup extra virgin olive oilGround black pepper to tasteDash of salt
Directions
Mince garlic and set aside. Chop cilantro and put into a blender or food processor. Cut pepper into quarters, discard seeds, and chop finely. Add pepper and reserved garlic to blender. Squeeze the orange and lime juices into the blender. Pour in olive oil. Process until mixture is pureed. Add ground pepper and a dash of salt.

Makes about 3/4 cup.
