Ingredients

    2 small tomatoes, diced
    2 green onions, chopped
    1 green pepper, chopped
    1 can black beans
    1 can sweet corn
    1 can garbanzo beans
    1/4 cup balsamic vinegar
    2 Tbsp olive oil
    2 Tbsp lime juice
    1 tsp cilantro
    1 tsp cumin
    1 tsp sea salt
    sliced avocado (optional, not included in calories)

Directions

combine all ingredients except avocado and refrigerate for 3 hours. Serve with sliced avocados on the side.

    This was very good and felt really healthy packed full of protein. I might cut the balsamic in half next time though. - 7/12/12
